Sunny salad with Somborska

The unusual sweet and salty combination with cantaloupe in the leading role is a real treat for both your eyes and palate. Serve the "sunny" salad as a refreshing side dish to meat dishes or a light meal when the weather is hot.

The culinary advice

Cashew is a very nutritious and healthy ingredient because it contains five times more vitamin C than orange, less fat than other nuts and it’s a good source of antioxidants. Try to add it to salads more often and eat it instead of unhealthy snacks – your body will be grateful.

  1. Peel the cantaloupe with a teaspoon and remove the pulp.
  2. Put the removed pieces of the cantaloupe in a bowl, add lemon juice and chopped mint leaves and let marinate.
  3. Wash the lamb's lettuce, mix it with the marinated cantaloupe, diced feta cheese, salt and pepper, and season with vinegar and a few drops of extra virgin olive oil.
  4. Let chill in refrigerator.
  5. Add a handful of cashew nuts just before serving. Enjoy!
